Les Dolomies, La Cabane (2017)
Celine Gormally has been farming 5ha of vines using biodynamic principles since 2008. Les Dolomies is named after the special magnesium limestone found in this area of Jura, called Les Passenans, southwest of Arbois. The vines have a great root bed in the beautiful "iridescent" marl of the upper triassic keuper. Celine makes site specific wines; the La Cabane Pinot Noir is from the Les Boutonniers vineyard in La Frontenay with vines dating back to the 50's.
Her donkey's name is Octavia and she is training the donkey to do the tillage. Her husband, Steve, is also a big part of Les Dolomies.
Wild ferment, stainless steel. Red fruit, baking spice, vivid Pinot Noir.
