VINEYARD: A blend of younger vines (less than 45 year old) from Beaujolais-Villages and Brouilly.
ORIENTATION: Multiple parcels, exposure varies
SOIL: Sandy, granitic soils
VITICULTURE: Ecocertified (organic), in biodynamic conversion
VINIFICATION: Carbonic fermentation in concrete vats with whole clusters. Gentle maceration but no punch downs or punch overs to minimize extractions. Pressed with a tradtional basket press.
AGING: Aged 7 months on skins in amphora, permanent exchange with the "terre" (earth) in this vessel. Antidote to oxygen, thus eliminating need for sulfur. Pressed to tank and settled for 3 weeks. No fining or filtration. No SO2.
PRODUCTION: 250 cases anually
NOTES: Inky and black with dark cherry aromas and flavors. Structured and detailed, Alma Mater is a distinct creation unto itself and an outlier in the Lapalu lineup. It was a result of "alcohol-infused brainstorming" and has become a darling of the natural wine congnescenti.
