A bubbly dark pink petnat made from a 50/50 blend of Embolicaire (local version of Trepat) & Macabeo. Grapes are organically grown on less than 3ha of own vineyards. Harvested by hand, in conjunction with the biodynamic calendar. No de-stemmer here, everything is co-fermented, whole cluster, with 3 days on the skins. Short maceration in stainless steel, all native yeasts, on the lees for several months and bottled under crown cap to finish fermenting. Disgorged but otherwise no fining, filtering, or SO2 use ever. Joyfully bubbly, gorgeous pink color, and absolutely delicious.
