Morgane does almost all the work herself, by hand or with her father and their 2 horses Safran and Reine. Christian, who's day job as head winemaker at Chandon de Brialles, is heavily involved as well. The Dandelion vines are old and low yielding and require delicate care and attention. The farming is beyond just organic though. Copper and sulfur treatments are virtually abandoned, with milk from an organic dairy farm sprayed instead of sulfur. Indeed, spend time with Christian and Morgane you will learn more about true organic agriculture than anywhere else. They primarily farm Pinot Noir, but they have some Gamay and Aligote in miniscule quantities as well.\u003c\/p\u003e\n\u003cp class=\"\"\u003eIn the cellar nothing is added (no sulfites), ferments are with native yeast in concrete. Each vineyard is small and farmed uniquely to the others — though they are all organic with some Biodynamic principles employed. There are no tractors in the vines — everything is horse plowed. Morgane does almost all the work herself, by hand or with her father and their 2 horses Safran and Reine. Christian, who's day job as head winemaker at Chandon de Brialles, is heavily involved as well. The Dandelion vines are old and low yielding and require delicate care and attention. The farming is beyond just organic though. Copper and sulfur treatments are virtually abandoned, with milk from an organic dairy farm sprayed instead of sulfur. Indeed, spend time with Christian and Morgane you will learn more about true organic agriculture than anywhere else. The winery has 2 sets of qvevri, one for fermentation and one for aging. Both are buried below ground but at different levels. For fermentation, qvevri buried just below the earth's surface are used. With a slightly warmer ambient temperature, the environment is perfect for fermentation and extraction.  Following six months of maceration, the wines are racked off the skins and gross lees to another set of qvevri, buried 6 meters below ground. With a cooler temperature, this zone is perfect for aging and stabilizing the wines.  The wines are bottled with minimal to no sulfur and are neither fined nor filtered.
