The sparkling sibling to the still Albur Blanco that the brothers Jose and Miguel also make. This is a Petnat version of Palomino Fino, grown organically from a single vineyard of 35 year old vines planted on albariza soils from Pago Miraflores in Sanlucar (Viña el Confitero). Whole cluster with skin maceration for about a week before pressing and transferring to fiberglass. Aged for around 9 months and bottled unfined, unfiltered under crown cap and with low to no added SO2. On the labels they've paid tribute to some of the indigenous birds found in the Bay of Cádiz.
