A still skin-macerated wine made from 100% Xarel•lo, biodynamically grown on sandy chalk soils at an elevation of 220m - 310m. All hand harvested with 15 days whole cluster spontaneous fermentation with indigenous yeasts in 300-liter amphoras. Then it is pressed and the must returns to the same amphora for a 7-month aging. Bottled unfined, unfiltered, and zero SO2.
