An ancestral method petnat made from 92% Parellada, 8% Muscat (via an eco certified, organically grown plot) on 6ha of estate vines in the Serra de Montmell, part of the Baix Penedès over calcareous clay soils. The grapes are 50 years and 15 years old, respectively. Everything is hand harvested in boxes of 15 kg. Skimming and maceration with skins for 3 days, spontaneous fermentation with indigenous yeasts, smooth draining of the must without pressing in stainless steel tanks. On fine lees to the bottle until the moment of consumption.
