From Orgo, the artisan winery in Kakheti, Eastern Georgia. A project between father Gogi Dikishivili and Temur Dakishvili, they seek out 50+ year old vineyards (a challenge because in the Soviet era most older vineyards were ripped up in favor of higher yielding young vines). Dila-O is their “value” line with the goal of promoting Georgian wines to a larger audience. Still wild yeast fermented in qvevri, then aged in stainless steel, small amount of sulfur only added at bottling and unfiltered. 100% Saperavi
