Varietal: Pinot Noir

Vineyard: De Montille's parcels are situated on the slope in Monthélie.

Soil: A very rocky soil with very llittle topsoil that is poor in organic matter.

Viticulture: Certified organic, practicing biodynamic

Vinification: 50% whole cluster fermentation, 50% destemmed; zero sulfur used in vinification; 20-25 mg/l sulfur added at bottling. This translates to very little (if any) free sulfur, thus, this is a natural wine.

Aging: Aged 8 months in barrel (5-10% new), then assembled to age additional months in stainless steel.

Notes: De Montille's Monthélie terroir offers up a fresh, light and finesseful wine of pure pleasure. With zero sulfur in vinfication, De Montille believes it is even more approachable than if it had been made in a more traditional way. In Etienne's words, "this wine taught us how to manage sulfur for all of our other wines."
