Catherine and Dominque retired from winemaking a few years back, but have passed on the Domaine to skilled winemakers in the area. Although "retired" Dominique still plays an active role in the winemaking process, mentoring the winemakers that have taken over.
The Saint Aubin appellation is one of the hidden secrets of Burgundy because the vineyards border those of the premier crus of Chassagne-Montrachet and Puligny-Montrachet but do not command anywhere near their price. The estate is situated in the center of the village in the old presbytery. The Derain’s wines are certified Biodynamic by Ecocert. Low yields, old vines, hand harvested, low intervention methods, low sulfites, choice property representing extremely high quality – price ratio wines!
Mercurey La Plante Chassey is composed of 45-80 year old vines. Pinot Noir and a tiny amount of Pinot Beurot. Hand-harvested and destemmed before pressed. Feremented in wood and then matures in neutral oak for about 18 months. No filtration. Dominque used to make barrels, but he never uses new wood.
Garnet in the glass with a pinkish rim. The wine is loaded with cherry pit, orange peel & wild herbs. The palate delivers zesty red berry fruit, orange pulp & carries mineral infused herbaceous along to the elegant, lingering finish. This is a powerful & rustic Mercurey.
Pairing: Works well with roasts, spicy sausages, pork loin, veal chops, leg of lamb & pan seared duck breast.
