Must is pressed and then put into amphora (of various different sizes) \u003c\/span\u003e\u003cspan class=\"s1\"\u003ewhere it spontaneously ferments without temperature control. 5 months of aging in amphora without racking before \u003c\/span\u003e\u003cspan class=\"s1\"\u003ebeing bottled unfined, unfiltered, and zero SO2. Pale pink in color, fresh red fruits and rose petals on the nose.
