2017 is 100% Cabernet Franc made from 60+-year-old vines grown in clay and limestone providing depth amd finesse. A mix of destemmed and whole clusters are fermented spontaneously without adding any sulfur then aged in old barrels and fiberglass, resulting in a fine texture and structure reminiscent of pinot noir with a classic herbal cab franc character.
After learning with Olivier Cousin and Eric Dubois, François bought his own place near Saumur and started to make unconventional and very natural wines in huge cathedral-like troglodyte cellars. These caves are ideal for vinifying because of the natural temperature control and humidity. François works the vineyards with horses. In the cellar he uses old barrels, fibreglass tanks and the hundred year-old press that was there when he bought the place.
