Greenpoint Cidery is owned and run by Nika Carlson. Carlson fell in love with cider as a Brooklyn bar owner, and inspired by the Spanish, French, and traditional American cider she adored, transitioned to orchardist and cider maker (and designer (and distributor (and keg cleaner))). She is based in Brooklyn, and grows apples and makes cider in Hudson, NY.
First Edition is their main cider, and is made from a blend of three New York apples. It's fermented in two batches: one with wild yeasts, and one with a white wine yeast. The wild yeasts give in a slightly sour funk, and wine yeast emphasizes the easy beauty of the fruit. These batches are fermented bone dry, blended, and aged several months on the lees before they're given a secondary fermentation in the bottle with a champagne yeast. The frizzante bubbles elevate a delicate apple nose. It drinks with notes of citrus, grass, and sage, and finishes mildly tart with hints of stone fruit. Approachable in size and flavor, you might even call it chuggable.
