New and rare from Johannes Zillinger, his first Pet Nat! This is a crisp, refreshing and sparkling bone-dry blend of Grüner Veltliner and Riesling. The Grüner Veltliner is aged on its lees in steel, the Riesling is aged in 600L wood barrels. This wine is made from half 2018 and half 2019 fruit. The 2018 was fermented separately and was then combined with the 2019 to start the beginning of the Solera. The second fermentation took place with the addition of new juice directly into the wine from the Solera from the previous year. The fermentation was completed in bottle leading to the gentle and persistent bubbles.
At 10.5% alcohol, this is a quaffer with a distinctive salty, and sourdough flavor profile with a combination of tart apple and white peach notes.
