A Col Fondo sparkling wine from upstate New York in Niagra County. Made with a field blend of 11 varieties of grapes, 2 cultivars of pears, and honey all from Bookwood Farm and Vineyard. A blend of 2019 and 2020 vintages, the grapes and pears spontaneously ferment for 16-18 months with gentle food stomping. The honey, liqueur de tirage, is added to the bottle to make it a Col Fondo style sparkling wine.
