Vinification: Blanc de noir from organically farmed Xinomavro grapes, fermented by its native yeast with some temperature control in stainless steel, free run, and raised for another 5 months in stainless before bottled unfiltered, unfined, unsulfured. It went through full malolactic in the bottle.
Notes: Sub-white color with obvious cloudiness, subtle effervescence, spicy aromas and an electric and tactile mouth sensation.
Light sparkles on this pale gold wine. The nose has Lychee and ginger spice with minerality showing as the effervescence dissipates. Could easily be described as fresh and floral but diving into the wine its personality begins to show. The palate has tons of citrus zest, ginger, lemon, ripe melon & slight yeasty notes adding to this wines beauty & complexity.
