The Vino de Mezcal line-up from Wahaka distillery are extremely rare offerings funding the Fundacion Agaves Silvestres to promote traditional distillates and maintain the biodiversity of Mezcal producing regions in Mexico. The team from Wahaka traveled to some of the most remote regions in Mexico to find and bottle these ultra-small production mezcals.
Made by many different distillers using many different production methods, the stylistic variety in this line-up is nearly endless. The Penca Verde was distilled by Valentin Celis in Zimatlan, Oaxaca. Roasted in conical earthen pits and crushed by hand using wooden mallets, the Penca Verde was fermented and distilled twice in traditional clay pots. Bottle 129 of 135
