Description
100% Zalema (a native grape almost exclusively found in Condado de Huelva) from within 5ha of estate vineyards of 60+ year old vines grown organically over clay and loam soils. Hand harvested, with 15 days on the skins in stainless steel. Indigenous yeast fermentation in stainless for less than 2 weeks and then bottled in ancestral form to keep the bubbles. No fining, filtering, or SO2 added whatsoever. Bottled only in adorable little half bottles and very limited production.
