Description

Pablo Matallana is a forward-thinking, young winemaker on the Canary island of Tenerife, the largest of the volcanic archipelago off the coast of Africa. His goal is to produce wines of honesty, freshness, and drinkability, all while respecting his surrounding environment, and maintaining individual characteristics of each vineyard and vintage. Pablo is currently making wine out of a tiny garage in the even tinier town of La Esperanza, where he has been since he began this project in 2015. Pablo studied enology at the highly respected Polytechnic University of Valencia, and after graduation he worked with well-known winemakers such as Sara and Rene Barbier at Mas Martinet and Antoine Luyt in Chile.

This Tinto cuvée is made from old-vine Lístan Negro with a small amount of co-planted Lístan Blanco, grown in hoyos in a vineyard named “Chibusque” located incentral Lanzarote. The grapes were hand-harvested in mid-August, destemmed and skin macerated for 3 days before pressing into steel tank for native yeast fermentation and aged on fine lees for 11 months. The finished wine was bottled without fining or filtration the following July.
