TERROIR: Black schist bedrock. Iron and calcium rich, sandy soils. (Find oyster shells.) Vines from the 1980s. Certified organic.
VINIFICATION: Méthode champenoise. No dosage. Saignée from the Rouge aux Lèvres ferment. Disgorged following spring after harvest.
