Bilaro Spirits is the project of two recovering sommeliers, looking to share their love of all things vinous and bitter. Founded in 2016, after years of recipe testing, they released their first amaro, Amaro Bilaro, made in the style they love: balanced, bracing, and most importantly, bitter. Based in Sebastopol, in the western reaches of Sonoma County, Amaro Bilaro uses only premium grape spirit as a base, and sources many of the fresh herbs locally.
