Region: Roussillon
Grapes: 95% Grenache Gris, 5% Grenache Noir
Winemaking: Both grape varieties harvested on the same day and undergo a 7-day whole bunch co-fermentation in fiber tanks. The grapes are pressed and transferred to sandstone amphora to finish fermentation. Only the naturally occurring indigenous yeasts were used, and the wine remained on the lees until bottling. Aged 5 months in amphora. Prior to bottling a low dose of sulfur is added to the wine. Bottled unfined and unfiltered.
