Description
Named for Thibaut Pinot, France’s finest cyclist (indisputably), this wine has range and momentum. You’ll find all the classic notes of an ethereal Pinot Noir (rose petal, strawberries, black pepper) but with an unexpected liveliness and high-toned acidity.
It’s the sort of bottle you’d swiftly empty during a rooftop apéro with friends, or fly home to share with family over the holidays.
•Whole cluster crush into a large egg for around 14 days of maceration with daily (and gentle) pump-overs as needed.
•Pressed into neutral oak barrels for the remainder of fermentation and élevage, before bottling in march of 2024.
•Spontaneous fermentation with autochthonous yeasts, bottled without fining, filtration or added sulfites. Proudly grown and made in New York.
