Description
Sistema Vinari is a project of Eloi Cedo, from Mallorca (also known for 4 Kilos wines). A blend of organically grown and hand harvested grapes — 50% Callet & 50% Manto Negro macerated with the skins and fermented in stainless steel for 20-35 days. Aged on the lees for 6 months in stainless tanks and then 6 months in bottle before release. Bottled unfined, unfiltered, and only 7mg/L of SO2. Annual production is 1,700 bottles in (1L) format.
