Description
Pintom Rosado Subversivo comes from northwest and southeast facing biodynamic Pinot Noir vines planted by Canopus in 2010. The grapes were harvested by hand and divided into three parts: the first for a rosado that is pressed with no maceration, the second for a whole cluster wine made oxidatively in an open fermenter, and the third for a rosado with an infusion of whole cluster grapes from a separate parcel harvested five days later. After fermentation the wine was blended and spent 7 months resting in a ceramic amphora. The wine was bottled without fining or filtration, and 30 ppm’s of SO2 total.
