Domaine de la Cras, L’Equilibriste Bourgogne Blanc (2023)

L'Equilibriste Blanc comes from a 1ha parcel of Chardonnay in the town of Talant, which Marc Soyard planted in 2018. Talant is located just next to Plombières-les-Dijon, but the vineyard is across a small valley and so exposed to different weather patterns than the vines at Domaine de la Cras. The city of Dijon preferred that Marc plant new vineyards next to the old ones, but Marc decided to plant the vineyard in Talant to hedge against localized frost or hailstorms, and also to explore a neighboring terroir that has been completely abandoned since phylloxera. As with the other Equilibriste cuvées, this one is unfined and unfiltered, and bottled entirely without sulfur. Certified organic, practicing biodynamic.
