Description

LOCATION: Burgundy, Côte De Beaune, Demigny. Size, Varieties, Etc: 6.32 total ha (15.6 acres), scattered from Rully, through the Hautes Côtes, up to Beaune. Since 2002, Jean-Yves completes production with some additional grape purchases.

VITICULTURE: organic methods (not certified), Jean-Yves works to encourage biodiversity through permanent observation of each parcel’s ecosystem. Noteworthy: from humble beginnings, including a stint working at Becky Wasserman & co. And an internship Chez Dominique Lafon, Jean-Yves set out to create his own domaine in 1992, converting his shed into a make-shift cuverie. His modest original holdings of bourgogne rouge and aligoté have evolved to include more prestigious parcels higher on the slope, and the shed is now a fully functional fermentation room, and an underground barrel cellar completes the operation. Jean-Yves’ unyielding determination, incredible charisma and graceful, affordable burgundies make this an address that deserves your attention.

WINEMAKING: whites – gentle pressing, light settling, indigenous yeast fermentation in barrel, élevage on fine lees for 12-18 months, lightly filtered. Reds – 100% de-stemmed, indigenous yeast fermentation in open wooden vats, élevage on fine lees for 12-18 months in barrel, no fining or filtration.
