Fun facts: This wine is made within the Jasnières appellation but intentionally declassified to Vin de France. It comes from a single vineyard of very old vines of Chenin Blanc on a steep hill with a southern exposition. The result is a powerful, age-worthy Chenin.

Winemaking: The grapes go through a slow and light direct press. Débourbage takes place for 24 hours and then the must ferments and ages in vat until bottling. Malolactic fermentation usually follows and is never halted. The wine is then racked off the gross lees, a light filtration takes place and a small amount of SO2 is added at bottling.
