Description
A sparkling red wine made from 100% Tintilla de Rota from Pago Balbaina, Jerez (Viña Calderin del Obispo vineyard) over albariza soils. Hand harvested, maceration of 3 days with the whole cluster. Spontaneous fermentation without the addition of any type of additive. Bottled under crown cap for Method Ancestral. 8 months on the lees. Disgorgement in the second half of May. This tastes fantastic! Clean, snappy, fine bubbles and deeper fruit components. Serve cold with charcuterie :)
