Les 7 Crus - A superb non-vintage bottling that beautifully synthesizes the pure and opulent fruit of top quality chardonnay vineyards in the Côte des Blancs with a racy, structured minerality that gives the wine superb length and cut. It is delicious out of the blocks, but really will easily keep ten to fifteen years.
Varietal: 90% Chardonnay 10% Pinot Noir
Vineyard: 100% of the fruit comes from estate-owned parcels located in each of the seven villages in the Côte des Blancs: Avize, Oger, Oiry, Cramant, Avenay Val d'Or, Bergères les Vertus, and Mardeuil. Made up of 60% of the 2017 harvest and 40% of 2016 harvest.
Soil: predominately limestone and clay
Viticulture: Practicing organic; use of high quality organic compost for the soils and vines; all fruit is hand-harvested.
Vinification: Following 100% malolactic fermentation, one-quarter of the wine is aged in older (more neutral) 600L casks, the remainder is aged in stainless steel tanks. Dosage is 6 grams/liter. SO2 < 50 mg/l. bottled in May 2019 without fining or filtration.
Aging: Sur lie for 20-32 months.
