VINEYARD: Best parcels of Chardonnay from four villages on the southern slopes of Epernay and the Côte des Blancs; vines planted in mid-1980s; limestone soils and a presence of fine silts and chalk on the surface; chalky sub-soils.

VITICULTURE: Farmed in a sustainable manner and influenced by ecological methods with a strong emphasis on biodiverstiy. Practicing organic.
VINIFICATION: Grapes are picked by hand when fully ripe, and traditionally pressed. Alcoholic fermentation in foudres and barrels with regular stirring of the lees, partial malolactic fermentation. Aged sur lie for 7 months before bottling. 50% reserve wines aged in concrete tanks. No filtration.
