From 20 year old vines planted to 1.5ha of sand and clay limestone soils, the grapes are harvested between August 25th and September 2nd. Maceration lasts six months followed by spontaneous fermentation lasting three weeks with temperature control in stainless steel. Unfiltered. Certified biodynamic.
