Description
This is Tom's top white wine. A blend of 95-year-old Grenache Gris and Macabeu farmed organically on schist soil. It is the only white not produced and named after its site.
Whole clusters of Grenache Gris are pressed directly and the juice blended with Macabeau after a two-week soak on their skins in 2100L foudre. It ages on its lees until bottling with no sulfur addition. This wine is intensely perfumed qnd loosely knit with stone fruit, mature citrus and a bit of grip from the Macabeu.
