Description
Pinerolese white wine made from the local variety Malvasia Moscata, a variety found only sporadically in old vineyards in Piemonte. The vines are planted in sandy soils on the Pinerolo hill which has veins of graphite in its outcroppings. Half of the wine is direct press and the other half macerates through alcoholic fermentation (7-10 days). The wine spends 6 months on the fine lees in stainless steel with regular battonage before resting in the bottle for an additional 2 months before release.
