100% Verdejo with extended skin contact making an orange wine.
Organically farmed, very old and ungrafted, pre-phylloxera vines grown on calcareous sandy soils at 900m of elevation near Segovia. Grapes are hand harvested, destemmed, and placed into 320L amphora where they first go through a cold maceration for several days until the native yeasts adapt to the environment and the magic of fermentation begins! The next phase is carbonic maceration, where the grapes begin breaking little by little generating CO2, which Ismael believes is the natural protector of this wine-must, and after almost 5 weeks of slow fermentation, the process is finally complete. The wine goes on to age for 6 months together with the skins, 50% of the skins are partially pressed and this pressed wine is added back to the amphora. This then ages for 11 months on the fine lees and no bâtonnage. Bottled unfined, unfiltered, and with zero SO2.
