Certified Biodynamic. Chenin from 3 plots: La Croix Hardie – 2003 (east/west) Les Barillères – 1982 (north/south) Les Barillères – 1971 (north/south). Soil: Quartz gravel on the surface, red sandy soil of about 50 cm in depth, forming sandstone slabs in places. Subsoil of grey and blue foliated schist. Manual harvest, slow pressing. No clarification. Vinification without inputs of any kind. Natural and total malolactic fermentation. Vinification and maturation in stainless steel vats for 12 months. Bottled without filtration. Volcanic sulphur (10 mg/l) can be added one month before bottling depending on the vintage.
